I neglect PR. Good Grief! I lack the inclination unless decanters are the meal for that eve. Even then, I don’t care most of the time and delete the next morning. I hope anyone reading this has a delightful Thanksgiving with lots of fat. Cream and butter are my gods as I like consistency.

My menu at this hour is:

  • One bird brined in sea salt, sage, rosemary, thyme and lots of peppercorns. It will be stuffed with aromatics and slathered with a sage, thyme butter.
  • I am never a fan of the “canned” green bean casserole. I’m gonna try this version: blanched haricot verts with a mushroom cream sauce topped with fried, tempura-coated onion slivers.
  • Cornbread stuffing with the veggies sauteed in bacon fat. I forgot to buy sausage.
  • Macaroni and cheese. Never from a box. It’s a travesty if that is a choice.
  • I haven’t decided on the cranberry dish yet.
  • I have a mess of mustard greens.  I’m thinking garlic, onions, and lots of sherry vinegar as that is my new favorite.
  • Yukon Gold mashed taters.
  • I might prepare some deviled eggs with lots of horseradish.
  • Pumpkin pie.  I like to add Domaine de Canton ginger liqueur and Amaretto to fresh pumpkin.  I’m not a fan of canned pumpkin. I don’t care how damn easy it is.
  • Mini-pecan tarts.

Thanksgiving is always a carbohydrate holiday for me.  Hell, pick any day of the week and it is a carbohydrate holiday.  I should fix more veggies.  Maybe some Brussels sprouts or broccoli?  Decisions. Decisions.  What’s a boy to do?

I will watch Pangs (Season Four, Episode Eight ) of Buffy.
